Imagination and creativity come when you least expect it, when you are happy, relaxed and really enjoying yourself,” says the tall, confident and sharply dressed three- time international cocktail competition champion Aki Wang as he pours me a drink named “Pilot 23 crossing the cloud” – a concoction of Zacapa 23 rum, Taiwan’s Iron Goddess of Mercy tea shrub, Les vergers Boiron blackberry purée and espresso. The presentation of the cocktail at the Vida Rica Bar at Mandarin Oriental, Macau is set up so that a paper aeroplane is attached to the tea infuser and hung on the side of the glass. The experience of appreciating the drink starts from the momentAki lights it up. Smoke begins to fill the air and the tea aroma is pleasantly intoxicating. It is as if we are flying high through tea-scented clouds, feeling so thrilled and free that landing on the ground is the last thing on our mind.
