品 68 #10 2017 年 7 月 “站 在吧台后面,最大的乐趣莫过于与客人互动。你总能 听到林林总总的大胆想法,而这是一个人独处时所 无法获得的灵感。想像力和创造力往往在你最不经意时,感到 快乐时,身心放松和真正享受时,不期而至。”高大、自信、 时尚的三次世界鸡尾酒大赛冠军 Aki Wang 一边说,一边为 我倒上名为「Pilot 23 crossing the cloud」的饮品,混合了 Zacapa 23 朗姆酒、台湾铁观音茶、Les vergers Boiron 黑 莓果泥以及澳门文华东方酒店御苑酒吧的浓缩咖啡。 其外观亦抓人眼球,纸飞机与滤茶器相连,悬垂于酒杯侧 面。美妙的体验从 Aki 将其点燃那一刻开始。烟雾弥漫,茶香 醉人,犹如在散发着茶香的云朵中漫步,让人心生悸动,无比 自由,而此时最不愿的,就是坠落地面。 我评论道,“它让我忆起甜蜜的童年,没有任何烦恼,花 很多时间玩玩具;但这款饮品同时又是复杂的,撩动起各种感 官,口味微妙且层次均衡。整体颇有玩味,让人印象深刻。” Aki 踏足餐饮业已有二十二年,不仅作为专业调酒师,自 2001年起更积累了丰富的顾问经验。他还是台北邑馔食饮生活 集团的创始人兼共同所有人,同时执掌四家餐厅及酒吧、一家 餐饮管理咨询公司、一家葡萄酒及烈酒进口公司和一家设计公 司。如今他被誉为「华人鸡尾酒教父」,但据他所言,成功之 路并非坦途。 “T here is nothing more fun than interacting with clients when you are behind the bar. You get so many outrageous ideas from them that you would never think of if you are alone. Imagination and creativity come when you least expect it, when you are happy, relaxed and really enjoying yourself,” says the tall, confident and sharply dressed three- time international cocktail competition champion Aki Wang as he pours me a drink named “Pilot 23 crossing the cloud” – a concoction of Zacapa 23 rum, Taiwan’s Iron Goddess of Mercy tea shrub, Les vergers Boiron blackberry purée and espresso. The presentation of the cocktail at the Vida Rica Bar at Mandarin Oriental, Macau is set up so that a paper aeroplane is attached to the tea infuser and hung on the side of the glass. The experience of appreciating the drink starts from the momentAki lights it up. Smoke begins to fill the air and the tea aroma is pleasantly intoxicating. It is as if we are flying high through tea-scented clouds, feeling so thrilled and free that landing on the ground is the last thing on our mind.
