For this special occasion, mooncakes are usually prepared well in advance for people to give away as a gesture of goodwill. But these mooncakes come in many shapes and forms. For Singapore’s dessert queen and one of Asia’s most progressive pastry chefs, JaniceWong, it is the perfect chance to test the limits of dessert making. “I am 34 and for me I think the traditional mooncakes are okay, but for the younger generation, some of them just cannot accept the heavy taste and texture,” Janice explains. “So I created something that balances classic with modernity.” There is no doubt Janice’s audacious take on mooncakes shows her endless passion for culinary art. Made in various colors and flavors, each one wraps a chocolate confectionery with lotus paste and a layer of glutinous rice. At first sight, their texture might seem somewhat similar to Japanese mochi, but the exterior look and feel is just like a classic mooncake. The ultimate surprise comes when one bites into the middle, where a velvety smooth chocolate truffle with a thin outer shell awaits discerning taste buds.
