He was a sophisticated drinker, a connoisseur who sought out the best bars in Paris and Pamplona. The writer is now the inspiration behind Hong Kong bar The Old Man, a joint venture between three of the city’s cocktail bar forerunners – Agung Prabowo, James Tamang and Roman Ghale. Nestled onAberdeen Street, the speakeasy bar concept pays homage to Hemingway’s Pulitzer Prize winning fictional work, The Old Man and the Sea. Legend has it that Hemingway adored some decidedlyun- macho drinks like theWhite Lady – made from gin, Cointreau and lemon juice – and a host of champagne cocktails. On the other hand, he hated sweet drinks, with “No sugar, no fancying,” his famous daiquiri directive. That explains why he wasn’t a mojito fan and likely never even tasted one.
