Tucked behind the coffee shop façade, the roasting room features a customized 15kg GiesenW15Acoffee roaster fromthe Netherlands with an impressive production capacity of up to 15 kilograms. Move on to the cupping area and you’ll find licensed Q-graders tasting and profiling the coffee to determine the cup qualitybased onkeyattributes suchas overall flavor, sweetness, acidity, after-taste, balance, mouth feel and uniformity. The magic happens at the coffee lab – the designated research and development lab where mathematics, physics and chemistry principles come to life. Here, experts test out the fineness of grinds, quality of the beans, tamp pressure, brewpressure,waterquality, temperature and timing. Finally, the bespoke corner allows guests to create their own unique blend of coffee from four individual origins, doubling as a sensory playground. The selected beans will then be roasted using the Aillio Bullet R1 sample roaster while customized packaging will add the final bespoke touch.
