Fresh Water brings to mind a lush tropical rainforest with elderflower cordial, homemade thyme syrup, yuzu juice and soda water. La Paloma Grata, named after the Spanish word for “dove”, is made with grapefruit juice, agave syrup, grapefruit soda and fresh lime. Morning Dew is reminiscent of pearls of dew clinging onto the tips of grass blades in the evening light, a concoction of Dilmah green tea, jasmine tea and homemade Pandan syrup all carbonated in a Perlini shaker. The final cocktail is a quirky trip down memory lane, with Sundae Libre consisting of French vanilla syrup, homemade lime sherbet and Coca-Cola.
