Founded in 2000 by Lai Yau Tim in Hong Kong, Tim’s Kitchen serves a legendary version of snake bisque with a thin consistency and a generous amount of fish maw and 粹,即为着重以蛇骨熬汤这一步骤。 黎有甜师傅师承广东传奇名厨李才大 师,即人称「江太史」的饮食名家江 孔殷的家厨。 早于清朝末年,江太史已是广州 上流社会无人不识的知名人士。后 来,他与英美烟草公司合作,从而变 得家财万贯。江太史对饮食的要求极 高,本身就是饮食名家。为了确保质 量,他甚至拥有专为家族厨房提供食 材的农场。主理其家族厨房的,正是 李才大师。 李才大师离开江府后到达香港, 担任恒生银行餐饮部主厨一职。李才 大师的得意门生之一,正是黎有甜师 傅。后者于1967年入行时,还是年 仅十七岁的小伙子。回想起厨师生涯 的起步阶段,黎有甜师傅还记得为达 官贵人工作时所承受的巨大压力。 他回忆道:“刚担任学徒才几年, 李才大师便撒手人寰,留下我还有另 外一位同事,负责恒生银行餐饮部的 other precious ingredients. With decades of experience in the kitchen, Chef Lai learned the authentic recipe of the bisque, with an emphasis on the snake bone broth, when he was working with culinary master Li Cai, who was once the head chef of Jiang Tai Shi. During the Qing dynasty, Jiang Tai Shi was a well-known individual in Guangzhou’s high society. He worked with the British American Tobacco company and consequently became extremely wealthy. With a passion for the finer things in life, Jiang was a particularly meticulous gourmet. He even had his own farm to produce ingredients for the family kitchen, where Li was at the helm. After Li Cai left the Jiang family, he moved to Hong Kong and became the master chef in the banquet department of the Hang Seng Bank. Master Li’s apprentice, Chef Lai, was only 17 when he started his career in 1967. Recalling the days in the early stage of his career, Lai tells High Life what it was like to work under enormous pressure for the rich and famous.
