HIGH LIFE 55 A celebration of contemporarymulti- ethnic cuisine, themenu at Voyages byAlain Ducasse distills 30 years of chef Alain Ducasse’s culinary travels to all corners of the globe. Featuring a bar where magic happens with mixologists whipping up custom- made concoctions that tantalize taste buds and spark conversation, it is one of two Alain Ducasse restaurants found inMorpheus at City of Dreams. Whether it is traditional French bistro fare, Peruvian-Japanese creations, classic American comfort food or the spice-driven flavors of the Middle East that one seeks, the restaurant’s offerings are both an expedition and recognition of what each region has to offer. Voyages by Alain Ducasse is not only a feast for the nose and tongue, but also the eyes. On one side of the restaurant space, a series of prominent installations by French artist Léa Maupetit – an illustrator who has drawn 100 of the most iconic ingredients – are mounted and proudly displayed on a wall. The other side of the restaurant is home to an octopus painting by Parisian artist Romain Bernini, who is known for his evocative use of vivid colors. Thomas Ferrand, chief sommelier for Voyages by Alain Ducasse, has carefully crafted a wine selection that highlights the best vineyards from the old and new worlds. Highlights include the 2016 Moss Wood Chardonnay from Western Australia’s Margaret River and the 2014 Domaine Gauby Les Calcinaires from Southern France’s Roussillon wine region. The journey opens with a hand- picked selection of dishes to suit a variety of palettes. For a touch of umami, one can savor flavors of the sea with raw Taï fish and sea urchins. Otherwise, the restaurant’s inventive take on shrimp toast with katsuobushi flakes is a heavier choice.
