HIGH LIFE #5 February 2017 45 此 前曾到访澳门美高梅宝雅座的客人必定知道,该法国餐 厅的酒单厚重犹如辞典。去年,宝雅座接连斩获多项国 际权威酒评的年度最高殊荣,包括中国的《China’s Wine List of The Year Awards》、英国的《The World of Fine Wine》及美国的《Wine Spectator》。 澳门美高梅取得如此骄人的成绩,其饮品部行政总监 Stéphane Soret 可谓居功至伟。宝雅座令人炫目的酒单和精 致可口的美食固然出众,但对 Soret 而言,其终极目标还是为 市场提供物有所值的上等葡萄佳酿。 他解释说:“宝雅座厚如辞典的酒单,可能让人有些望而 生畏。我会从中挑选一些优质酒款,推荐给客人,让每个人都 能轻松享受美酒配佳肴的乐趣。” 在法国南部城市尼姆完成侍酒师文凭课程后,Soret 于 1989年移居伦敦,并在 Ma Cuisine 餐厅正式开始其侍酒师 生涯。及后他转至巴黎 Ledoyen 餐厅工作,期间不断进修, 获取 CMH-Paris(国际酒店管理欧洲中心)酒店管理学位。 1994年,Soret 前往美国,先后就职于多间酒店,并参 与到纳帕谷的网站 Wine.com 以及 Vigneron Imports 的事 务中。重返巴黎后,他在乔治五世四季酒店米其林星级餐厅 Le Cinq 担任侍酒师,并为法国外交部管理奥赛码头的酒窖。 2005年,Soret 回到伦敦,出任 Mosimann’s 餐厅首席侍 酒师。过去几年,他一直在中东及远东地区工作,期间担任新 加坡莱佛士酒店葡萄酒总监,并自2013年起担任 Decanter 亚洲葡萄酒大赛评委。 A nyone who has been to MGM Macau’s Aux Beaux Arts knows that their wine list resembles a thick dictionary. Last year, the French restaurant garnered multiple honors from the world’s leading authorities on wine – China’s Wine List of The Year Awards, The World of Fine Wine from the UK and the US-based Wine Spectator. Stéphane Soret, Executive Director of Beverage of MGM Macau, is the man behind this great success. The bistro’s comprehensive wine list and sophisticated menu pairing is impressive, but Soret insists that his ultimate goal is to simply offer superb quality wine with great value. “Aux Beaux Arts’ wine list is heavy and a bit intimidating, so what I have done is to select several labels of excellent quality to recommend to our guests, so that anyone can enjoy a dining experience with wine,” he explains. Having graduated in Nîmes, France, with a sommelier diploma, Soret moved to London in 1989 to take on his first sommelierpositionatMaCuisine, beforeheading toParis.There he began working at Ledoyen and gradually worked his way upwards while obtaining a hotel management degree at CMH- Paris, European Center of International Hotel Management.
