HIGH LIFE #5 February 2017 47 In 1994 Soret moved to the US, working for various hotels and becoming involved with the launch of Napa Valley’s Wine.com and at Vigneron Imports. Following this he headed back to Paris for a sommelier role at Michelin-starred Le Cinq (George V) and managed the cellar of the Quai d’Orsay for the French Minister of Foreign Affairs. 2005 saw Soret’s return to London as head sommelier for Mosimann’s. Finally, he spent the past few years working in the Middle and Far East and as Wine Director at Raffles in Singapore while filling the role of a Decanter AsiaWine Awards judge since 2013. “In my opinion, these days, a sommelier should be more like a shrink,” the vastly experienced Soret says. “It is important to communicate with customers and find out what they are in the mood for. Of course, anyone with money can buy a bottle of Lafite, but my team and I want to share our passion and knowledge with diners. “The bottles and brands that I choose to feature are niche products of great quality. In 2016, a panel of judges formed by the world's most respected wine experts spent nearly four months selectingChina'sfinestwine lists. Among 420 entries from 47 cities, Aux Beaux Arts harvested two top-tier honors: “China’sWineList of the Year – Hong Kong, Macau & Taiwan” and “Best Hotel RestaurantWine List.” TheWorldofFineWine isanaward-winningpublication for the affluent audience of wine connoisseurs and collectors.Throughtheworld’smostesteemedscholars with an emphasis on wine culture, it distinguished Aux Beaux Arts as offering one of the world’s most extensivewine lists in its “Three-StarAward.” Fromover 4,500 contestants, only two restaurants inMacau have received thehighest level of three stars. Meanwhile, Wine Spectator has also given its top- tier “Three Glass” Grand Award to Aux Beaux Arts for the second consecutive year. According to Wine Spectator , the 2016 “Grand Award” only recognizes 88 restaurants in the world whose wine lists offer sophisticated selections and appeal to a wide range of wineenthusiasts.
