With notes of strawberry, cherry and orange zest, the fruity wonder is elegant and balanced on the palate. A fan of purity and definition, Soret presents a bottle from one of Sancerre’s elite properties, Domaine Vacheron, to us next. Of all the wine regions in Loire Valley, Sancerre is perhaps the most well-known. The Sauvignon Blanc of Sancerre possesses a smoky or flinty character and the wines are bright and crisp. The refreshing notes of lime and gooseberry are evident. Just when we think no more surprises are coming, Soret brings out Rocky Point Central Otago Pinot Noir by Prophet’s Rock’s Paul Pujol. A winemaker originally from New Zealand, Pujol has always been drawn to Pinot Noir and the aromatic whites of France. Having joined Prophet’s Rock after a six-year around the world odyssey chasing these varietals, he makes Pinots that are typically expressive, perfumed and supple. “The trend of wine appreciation now is similar to that of coffee. In the past, peoplewere fond of thick espresso, but now they are into cold brew and pour over coffee. Sophisticated wine drinkers prefer subtleties and nuances rather than intensity. Individuals’ tastes are changing,” Soret concludes.
