品 68 #8 2017 年 5 月 HIGH LIFE #8 May 2017 69 对 中国风的忠实追随者而言,「朝」实属澳门出类拔萃 的餐厅之一。用餐区的对称装潢古雅华丽,天花以图 案木板为主,悬挂着红布灯笼。甫踏入大门,便恍若穿越到古 代宫廷世界。 餐厅的八间私人包厢以秦、汉、隋、唐、宋、元、明、清 八朝命名,以黑色屏风分隔,并效仿各个时代的装饰风格。餐 桌上的瓷器与餐筷美轮美奂且格调一致,银器全由法国巴黎著 名品牌 Ercuis 精制。 我们点选的茗茶,以小巧的不透明或半透明茶壶奉上, 而茶壶的颜色,则根据茶本身的颜色而定。我们边欣赏室内环 境,边阅读餐牌。此时,行政总厨、大名鼎鼎的叶宝荣师傅, 悄然出现在我们的餐桌旁。 来自马来西亚的叶师傅,30多年来曾于世界各大豪华酒店 及高级食府任职,包括广州的宴遇、杭州的黄龙饭店、北京与 上海的黄浦会等,亦曾为多位中外政要下厨。以点心起家的叶 师傅,被《美食与美酒》杂志评为中国50大名厨之一。他渴求 通过融合传统中国风味以及创意灵感,让客人品尝到前所未有 的滋味。 他解释说,“通过使用世界各地的顶级新鲜食材,我们尝 试引领传统中国餐饮体验至更高的台阶。法国鹅肝乳猪件,是 我们的代表作之一。鹅肝来自法国,但烤乳猪则是地道的中国 风味。我糅合两种饮食文化中的精粹,以不同的口味和层次刺 激味蕾。美食需要令人感到兴奋,而不是乏味。” F or lovers of classical Chinese aesthetics, Dynasty 8 is one of the more exceptional dining spaces in Macau. The delightful journey of immersing oneself in another world begins the moment you step through the entrance, where the elegant symmetry of the common dining room is enhancedwith red cloth lanterns suspended frompatterned wooden slats affixed to the ceiling. Synonymous with the restaurant’s name and set apart by a black-tiled awning, its eight private dining rooms are each uniquely styled after one of eight dynasties – Qin, Han, Sui, Tang, Song, Yuan, Ming and Qing. On the dining table, colorful and exquisitely designed chinaware matches the chopsticks and silverware is etched with the Parisian brand “Ercuis.” After tea is ordered, it is served in great ceremonial style in an opaque or translucent miniature pot according to the natural color of the tea. Still overwhelmed by the beauty of the ambiance, we start to look at the menu before being granted a surprise visit from the ultra-talented Executive Chinese Chef Yap Poh Weng.
